Over the years I have done quite a bit of baking. In fact, before I began stitching a few years ago. Baking was the only hobby that I could carve out time for. These days, I don’t get much baking done. Now and again for a special occasion, I will whip up a yummy treat.
Today is Mother’s Day and I am so thankful for my mom and all of the many wonderful mothers of the world. I thought that it would be a nice day to share some of my favorite holiday cakes.
Have you ever tried a cornmeal based cake? If you have not, you might be surprised at how delicious and buttery they are. I really like to make cornmeal cakes with seasonal fruits. Strawberries, rhubarb, and nectarines are my favorite picks. Here is one of my favorite cornmeal based cakes with fruit. This one is such a winner!
If you are a fan of nectarine, you cannot go wrong with this cake. You will get incredible rave reviews. This cake will disappear so very fast.
Lemon is another extremely popular choice. You really can’t go wrong with a lemon cornmeal/polenta combo. The lemon flavor is also complemented very well by berries. Strawberries, blueberries, blackberries, or marrionberries are a few popular options. Not only do they enhance the flavor of your cake, but visually enhance. So lovely.
Another absolute favorite of mine is rhubarb. Rhubarb has the most wonderful, unique, tart zip! It also goes well with and is enhanced by many other fruits. One of my favorite combos with rhubarb is nectarine. Strawberry rhubarb is a tried and true favorite. I don’t know anyone who doesn’t like strawberry rhubarb. This is such a great recipe for a polenta and rhubarb cake. You will absolutely love it,
